Esteban is definitely paying attention at least. Tidus has his full focus upon him as he talks, absorbing all the information he gives and questions at the same time. Of course, the half-elf knows that there's specifics to any sport, skills, talent that anyone is working on that would never be noticed by an amateur, but it's so interesting to hear about this in-depth. Pressure? Fighting? Esteban wouldn't have considered it, but it makes so, so much sense.

Also, seriously, an hour? Out at Sea? It boggles the mind.

The only creatures he's ever seen fighting in water were the dragons who had taught him how to swim. They'd been water-creatures to begin with, and their teeth had been their main weapons. The drag of a weapon through the water didn't seem useful in a fight against enemies.
