In truth, Eight doesn't really know how to dance any specific dance either but they make up for it with enthusiasm. Most Inklings and Octolings just let the music tell them how to shake and move. There's usually a lot of hopping and limb movement. For the fast things Eight is swaying her hips and moving in place. Slower pieces gets her to move her hands in small circles and shake her shoulders. Ken is more than willing to copy her, but she's fine with copying anything he does.

It's more about having fun together than making any grand artistic statement. That's what was so fun about dancing!
